Why are purple peas purple?
Answer
The purple coloring is from the pigment anthocyanin. This is a beneficial antioxidant that is contained in most purple pigmented vegetables such as purple broccoli, purple cabbage, and eggplant and in fruits such as currents, raspberries, and grapes. This pigment is not in most green pea varieties-

It's a great photo, but I suspect they might have been eliminated at the eligibility checks for la spice's purple competition, because if they are anything like my purple french beans they will inconsiderately turn green when introduced to boiling water.

Oh really? I'd no idea they might change colour...
I saw these growing and just thought they were a wonderful colour. I was going to look for some seed, but if they're just going to lose that fantastic colour I might not bother...-
Oh, do bother! They taste just as good, even if they change to green. I grow Cosse Violette french beans, and might have to grow your purple peas too, so the former don't get too swanky about their purpleness!
